Aloha Kona Coffee Cake Recipe
This recipe is based on a classic pineapple upside down cake. It is a wonderful
treat to be served alongside a hot pot of coffee. This recipe is very tropical
and very easy to make!
Ingredients:
- 1/2 cup butter
- 1 cup flour
- 1 cup sugar
- 1 teaspoon baking soda
- 2 large eggs
- 1 8 oz. can chopped pineapple
- 1/2 cup unsalted macadamia nuts
- 1/4 cup brown sugar
Preparations:
Butter and dust 9-inch spring-form pan with removable rim. Cream butter and sugar together. Slowly beat in eggs and then add dry ingredients until it's smooth. Scrape butter into the cake pan and spread smoothly. Scatter pineapple and macadamia nuts evenly over the top. Sprinkle brown sugar over the fruit and nuts.
Bake cake on center rack of oven at 350 degrees for 50-55 minutes until cake starts to get brown. Let cake cool and serve warm with a hot cup of Aloha Kona Coffee. Enjoy!
*Berries can be substituted for pineapple.
